Roast, fry or ratatouille! These sweet squash are no stranger to most kitchens. Unlike varieties of winter squash, their tender flesh and sweet fruitiness are best enjoyed as soon after harvest as possible. The yellow variety is slightly sweeter, while green is more grassy and herbaceous. Try these out in Cryssi's Crispy Zucchini Fritters recipe!

Ok fine: make a pesto, top a margherita pizza (pick up a few Archie's crusts from our market and make your own, trust me), reduce with sugar and water for a delicious simple syrup, muddle into a cocktail (I even throw a leaf in an iced cold cola from time to time!), mix into aioli for a sandwich or fry dip, or fold into chopped, fresh field strawberries with sugar for a sweet, floral ice cream topping like you've never had before!
