Spray-free Parsley from Twin River Farms. 

Fresh and lightly peppery, parsley plays nicely in cocktails, atop buttery potatoes and torn or chopped over just about any fat-rich meat!

Treating the parsley much like a bunch of flowers will keep it fresh longer. Trim the stems slightly, and without washing place the bundle in a container filled with about 1 inch of water

Spray-free Sorrel from Twin River Farms

Citrusy and a bit spicy. Somewhere between an herb and a leafy green, mixing in some sorrel can spruce up an otherwise bland salad easily. Sub this into a sandwich or serve alongside any cut of fish. Sorrel also has anti-inflammatory properties that target the respiratory tract!

Chard lies somewhere between spinach and kale in the 'greens spectrum' -- not as earthy or tough as kale, not as tender as spinach. This green is extremely versatile -- it can be sauteed, eaten raw in salad, and is delicious grilled over charcoal or on a regular grill. The stalks are traditionally prepared separately from the leaves, but who needs tradition!

Cocktail Tomatoes from Greenland Gardens

Slightly larger than a grape or cherry tomato (though some overlap is common), these half perfectly onto fancy toast or a salad all their own, char and pop perfectly in a cast iron to accompany soft scrambled eggs, and can even be halved and roasted with garlic and herbs for a rich side, or base for a sauce!

Haskaps from Riverbend Orchard

These berries are also commonly referred to as Honeyberries, but we prefer the Japanese namesake which translates to "little present on the end of a branch". A superfruit all their own, they taste like a bit of a mix between antioxidant-rich blueberry with a tartness reminiscent of raspberries before an apple-like sweetness finishes them off. Can be eaten raw, frozen for smoothies or baked into your favourite deserts!

Turnips from Johnathan Farms

 Part of the brassica family, these are no stranger to most supermarkets here in Winnipeg, yet many have never ever cooked with them! They can sub in for a variety of vegetables in your current favourites: gratin or mashed in place of potato is a staple, pickled or served raw on a crudite platter for a little more zing, or try incorporating them into a matignon alongside your favourite braised or roasted meat, where they'll happily soak up the flavour!

 

 

 

KALE & GARLIC SCAPE PESTO WITH SORREL AND PARSLEY

 

 

Ingredients

  • 1 bunch kale
  • 1 bunch basil
  • 1 bunch garlic scapes
  • 1 bunch parsley
  • 1 bunch sorrel
  • 1/4 cup walnuts
  • 1 cup parmesan cheese
  • 1 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Strip kale and sorrel leaves off stems and remove big stems from the parsley.
  2. Place kale, basil, garlic scapes, parsley, sorrel, walnuts and parmesan cheese in a food processor. 
  3. Process, adding oil through  the feeder, until mixture is finely ground. Season to taste with salt and pepper.

5 WAYS TO USE THIS PESTO!

Pesto is a versatile sauce that can be used in many different ways. Make a batch and store in the refrigerator for a week.

  • Stir a few spoonfuls of Kale &  Garlic Scape Pesto into a bowl of hot pasta (with some reserved pasta water) or cold pasta salad. I love adding fresh tomatoes, fresh mozzarella cheese and sometimes leftover grilled chicken!
  • Thin out some of this pesto with more olive oil and drizzle over a fresh tomato mozzarella cheese platter.
  • Spread some of this pesto on a sandwich on its own or mixed with mayo.
  • Stir some of this pesto into your favourite hummus.
  • Serve this pesto on top of  grilled chicken or fish.
