Winter Citrus Salad

To celebrate citrus week we made this delicious citrus salad. Finished with a honey citrus vinaigrette this salad is quick, easy and delicious!

 

 

SALAD:

  • Lettuce of your choice - we used spring mix.
  • 3 oranges - we used 1 blood orange, 1 cara cara orange and 1 navel orange. 
  • 1/2 an avocado
  • 1 small shallot, thinly sliced
  • Cucumber, thinly sliced
  • Mint or Parsley for garnish

DRESSING:

  • 2 Tbsp orange juice
  • 1 Tbsp lime juice plus more to taste
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 Tsp dijon mustard
  • 1 small garlic, minced 
  • Salt & pepper to taste 
  • 1/3 cup extra virgin olive oil
