Roasty Toasty Broccoli

Ingredients

1 lbs broccoli
1 garlic clove - peeled and slice
2 tbsp olive oil, butter or coconut oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp lemon zest
1/2 tbsp lemon juice
2 tbsp grated parmesan

Direction

1) Preheat oven to 400°F

2) Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 2 cups of florets.

3) Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Drizzle with 1 1/2 tablespoon of the oil of your choice. Sprinkle with the salt and pepper.

4) Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.

5) Well the broccoli roast, toss the garlic in a small amount of oil. Scatter the garlic around the broccoli pan for the last 8 - 10 minutes of cooking time. This will prevent it from becoming to crisp

6) Remove the broccoli from the oven and immediately toss with 1/2 tablespoons olive oil, the lemon zest, lemon juice, and Parmesan.

7) Serve hot and enjoy!
