We just a received a shipment of Wild harvested Lobster Mushrooms. What a treat.
There are a million recipes, but here are the basics

This reddish-orange mushroom has a seafood-like flavour, is very firm and dense, and is found growing in evergreen forests in certain areas of Manitoba. TO PREPARE: Scrape dirt off and slice thin. Drop into boiling water and boil until foam starts to come to the top of the pot.(Any particles of dirt will come out in the foam). Pour into colander & rinse with cold water. Drain. TO PREPARE FOR EATING: Saute onion in butter until soft. Add 3 c. of mushrooms and fry for about 5 minutes. Add minced garlic. Pour in one 500 ml. container of ½ and ½ cream and cook on low until cream boils down and thickens. (takes about 30-40 minutes) Add salt & pepper to taste. Chopped dill can also be added while mushrooms are simmering in the cream sauce. Enjoy & forget about calories!!
