Garlic Scape Pesto
Garlic Scapes are the the edible flower stalk of the garlic.Â Delicious, garlicky and ready earlier than the garlic bulb.
Chop one pound of Garlic scapes into 3 inch legnths, put them in a food processor and process until pureed
Add one cup of grated Parmesan cheese and half a cup of walnuts, process until smooth
Add the juice of one lemon and process until smooth
Slowly add a half to a full cup of olive oil as the food processor runs and process until smooth.
Toss with pasta, use on fish or chicken, spread on a nice crusty bread, eat with a spoon while lurking for a midnight snack....
Keep in your fridge for up to 2 weeks.
