Garlic Scape Aioli
Aioli is fabulous on sandwiches, as a dip, or in any place that you would like a creamy kick of flavour.
A hand full of garlic scapes, chopped
1/2 tsp sea salt
1 egg yolk (freely Ranged)
1 cup extra virgin olive oil or GMO free canola oil
Fresh lemon juice to taste.
In a food processor blend your scapes with the salt until a paste forms.Â Add the egg yolk and continue to blend until all mixed in.Â Add the oil in a small drizzle at a time until well blended and shiny.Â Stir in lemon juice to taste.
