Pepper Jelly Grilled Cheese Sandwich
Grilled Cheese:
1/2 cup Red Pepper and Garlic Jelly
1 cup arugula
1 tbsp fresh oregano, chopped
Salt and pepper to taste
1/4 cup basil pesto mayonese
4 oz. St. Andre cheese
Oil for rubbing or Butter
1 Prairie sourdough bread, sliced
1 grilled, seasoned chicken breast
Instructions:
Rub the outsides of bread generously with oil. Spread the basil pesto on the inside of one piece of bread and spread the Pepper Jelly on the other side. Evenly layer the St. Andre cheese , arugula and the grilled chicken. Place the sandwiches into the pan and cook until the cheese is melted.
