Here's What You can Expect in this Week's Protein Share...

Gourmet Protein:

Bison Pot Roast - Bison is from Spring Creek Farms. It is pasture raised and grass fed. Thaw completely then cook for 3-5 hours in the oven at 350 degrees in a roasting pan. Alternatively, Cook it in the slow cooker for the day with some liquid. This roast needs a long and slow cooking time to make it more tender. Cook until the meat falls apart.

Chicken Breast - Chicken breast is from Oak Island Farm. It's freely run and fed no hormones or antibiotics. Thaw then chop up for a stir fry, skewers, or a soup. Very versatile and you can grill chicken breast whole, then slice up for lunches the next day such as for sandwiches, wraps, salads, etc. I came across this Chicken Gnocchi Soup recipe I'm dying to try!

Ground Beef - Ground Beef is from Spring Creek Farms. The beef is grass fed and raised antibiotic and hormone free. It is very lean so be careful not to overcook it. For burgers, only cook a few minutes per side or mix with ground pork/something with more fat. It's great to use for chili because it won't leave a grease layer on the top! Regular Protein:

Bison Steak - Bison is from Spring Creek Farms. Raised naturally on pastures and grass fed. The bison will be a flank steak. Thaw, pat dry, season if you wish then cook for a few minutes per side on a BBQ or in a pan. Let it rest under a bowl for a few minutes. Then you can slice it thinly against the grain and its awesome for tacos. Use the bison for these Steak Tacos with Roasted Tomato Salsa. 

Stewing Lamb - Lamb comes from Spring Creek Farms. Best cooked at a lower temperature and slow so that it becomes the most tender. Brown in a pot on all sides, then add your liquid and veggies. It can then be cooked in the oven or a slow cooker. Follow this Food Network recipe for Lamb Stew! 

Chorizo Sausage - Pork sausage is from Spring Creek Farms. The pork is pastured, free run and has a non-GMO feed. This sausage is slightly spicy so you could add it to a casserole or a 1 pot meal with pasta. Try this End-of-Summer Kale & Potato Soup with Chorizo!
