In Your Protein Bag This Week...

Regular Protein Shares:

Organic Ground Beef - Ground Beef comes from Spring Creek Farms. It's grass fed beef and very lean so do not overcook. If making burgers you may want to mix it with ground pork to give it a bit more fat, otherwise make the patties thin and only cook for a few minutes per side. You can also cook the ground beef for a pasta dish, nachos, stir fry or this fresh summer recipe for Taco Pizza!

Organic Beef Stew - Stewing Beef is also from Spring Creek Farms. You can use this stewing beef for a soup, beef stroganoff or put in the slow cooker with potatoes, carrots, onions, etc. This meat is not as tender so you will need to braise, simmer or stew. You can follow these instructions:

1. Sear the room temp meat until brown on all sides 2. Place in a heavy pot, season, add liquid (red wine, stock, water, etc),season well 3. Place in a 250 degree oven and roast over low heat until done.

Ham Steak - Pork comes from Townsend Farms Natural Pork. Cook the whole ham steak once thawed in a pan, flipping halfway through cooking. You can also chop up the ham and put into an omelette, Hawaiian skewers or a soup. Any ham not eaten can be put in a bag and frozen.

Cottage Bacon - This bacon is from Townsend Farms Natural Pork. Fry in a pan over medium heat, it's a thicker bacon so it will be more chewy and less crispy than your traditional bacon. Save the fat at the end of your cooking to keep in a jar for frying potatoes and greens!
