Regular Protein:

Pork Bacon - This comes from Spring Creek Farms in Cypress River. The pork is freely ranged and contains no animal byproduct in the feed, antibiotics or hormones. Besides frying up the bacon for a weekend breakfast, you can use it in a BLT sandwich, spinach salad, bacon wrapped jalapeño poppers or put on a burger! Bacon and new potatoes are also a must! This recipe is for Crispy Cheese Bacon Potatoes. Definitely a treat! Whitefish - Fish is from Barry near Lake Pukatawagan. Use similar to pickerel or pike by pan frying, grilling or baking! It will be cooked when the fish is opaque and flakes apart easily. You can season with lemon, dill, olive oil or any light herbs. This Blackened Whitefish with Peach Salsa is definitely one to try! Bison Stew - Bison courtesy of Spring Creek Farms. This meat can be done in the crockpot/slow cooker for the whole day. Place the bison pieces in the slow cooker and brown on all sides. Then fill with water or beef broth, potatoes, onions, carrots and whatever else you want. Leave it on low for the day and after work it should be fully cooked and tender. Gourmet Protein:

Bison Ribeye - This freely ranged bison steak is from Spring Creek Farms. Thaw the ribeye completely and then pat dry and season with salt and pepper. Heat butter up in a frying pan and fry for 2-3 minutes per side. Or Heat bbq to high. Put steak on the bbq, then turn temp down to low. Barbecue for 2-3 minutes per side, then let rest 2 minutes before serving. Pork Chorizo Sausage - This pork is from Spring Creek. It's a bit spicy so if you need to cut the spice you can chop up the sausage first and mix into into pasta or a veggie casserole. If you're fine with it, thaw the sausage then cook it on the barbecue on medium heat for 10-12 minutes. It will get that nice crispy skin and you can serve it with grilled vegetables, corn or a salad! Leftover sausage you can chop up and fry with potatoes and garlic scapes in the morning! Bison Ribs - These ribs need to be braised before you pop them on the bbq. Get them out of the pack, and pop them into your slow cooker. Add a cup of red wine, a cup of chicken stock, some black pepper, chopped onion, salt and garlic. Turn it on low and let it simmer for about 5 hours. When the time is up, carefully remove ribs from slow cooker. Brush with your favourite bbq sauce, and pop on a hot grill to give them that charred smokey flavour. Those of you who are competent owners of a big green egg can put these babies on a slow smoke until they are fall apart tender.
