CSA pick up July 14/15

The weather is hot, it's time to crank on the bbq This Week everything that you are getting for your share is just perfect on the bbq. Gourmet protein Shares Grass fed beef Tenderloin. As you know grass fed beef is very lean so you have to cook it on a low temperature.  It cooks very quickly and it's easy to over cook your grass fed steaks.  We've included an instruction card in your bag.  Please follow it closely to ensure a juicy steak. Bison Burger patties- Our bison is also grass fed, so just like the beef, you have to cook it on a low temperature.  Please thaw out your patties before cooking them.  If you pop frozen patties on the grill, the outside of the burger cooks and dries out before the inside can thaw and cook.  Make sure to thaw your burgers, and get them to room temperature.  One they are warmed up, follow the same cooking instructions as the beef steak, but reduce the time from 3 minutes per side to 2.5 minutes per side. Freely Ranged chicken wings.  I love to marinate these in peri peri spicy sauce, then bbq them .  Chicken on the grill can cause flare ups.  The best way to prevent this is to heat your grill to high.  Turn off the flame on one side, and put the wings on that side.  No flame means less chance of flare ups. Protein Shares Pork Steak.  Pork steak is beautiful with a spicy seasoning, grilled on the bbq until done, then chopped up for tacos.  I love pork steak all on its own, but it also lends itself well to stir frys and tacos.  Be sure to thaw your pork steak out, get it to room temperature, and season it well before popping it on the grill.  Get your grill heated to high, then turn it down to medium before putting your steak on to cook.
