Last CSA pick up of 2013

Oh lucky you.  Last week you got a bag of bones, this week.....bison fat.  Maybe I'm going "little house on the prairie" on you, or maybe I'm just hoping that you actually try rendering your own beef tallow.  It's easy, it's not gross, and the tallow will replace the trans fat laden chemical filled things that you may currently be using to fry foods with. Not into rendering fat for your family to use? (though I really think you should if just to experience making hashbrowns cooked in the beef tallow that you rendered yourself).  Then render the fat for the birds!!  When birds are migrating (right now), they need large amounts of calories to make the ever longer journey to their homes.  The journey is ever longer as their habitat is lost making home further and further away.  Fatten them up for the trip!!! Just follow the simple instructions that the fine people at 'healthy green kitchen' provide. They give instructions for rendering pork fat, but beef or bison fat is essentially the same.  It really is easy, especially if you have a slow cooker.  Just be certain to do it on a day when you can have the windows on your house wide open, as the smell of rendering fat isn't all that yummy.   http://www.healthygreenkitchen.com/how-and-why-to-render-your-own-lard.html   Full Share Bison Steak (oh so delicious, cook on low, serve rare) Ground Bison Bison Salami, Nitrate free, feel free to heat throughout or serve as is.  Do not store thawed in your fridge for more than 3 days. Pike (best to make fish tacos with) Our friends Scott and Elaine make us supper every Saturday night during our Market season, which is the only way we have time to see our friends in the summer time!!  They made us fabulous fish tacos with coleslaw. I asked Elaine 4 times if I should put the coleslaw IN the taco, or eat it as a side.  I wasn't liking her answer to put the slaw IN the taco.  I finally did as I was told and boy am I glad that I did.  Pike fillets are meaty and flavourful and just the thing for fish tacos.  Check out chow for the recipe.  You'll be glad that you did!!! Our 2014 CSA will go on sale March 1st.  We will be sending out an email to you, this year€™s participants first.  You will have one week to pay for your 2014 CSA share in full via cheque or e transfer, after which point we will be releasing remaining shares to the general public.  We can not €˜hold€™ shares beyond that first week of March, without full payment.
