Freely Ranged Roaster Chicken.  These birds run around outside, are fed a diet of mixed grains as well as whatever grass, bugs and bits they find while ranging, and are raised without the use of antibiotics. These roasting chickens are beautiful as a beer can chicken on the bbq.   Thaw your bird out and bring to room temperature.  Season it well with whatever spices you like, and find a can of beer.  Open the can, drink about half of the beer.   This allows steam to form, and moisten the bird while it cooks.  You now have the inglorious task of inserting the beer can up the chicken's butt.  Balance your beer can and chicken on the grill, once secure and well balanced, turn you bbq on medium and close the lid.  It takes about 2 hours to cook a bird this way.  Just be certain not to make the fatal mistake that I did, which is to check the bird when almost done, want the skin a bit crispier, and turn up the bbq for the 'last 10 minutes' but forget it for half an hour.  My charred bird was still super tasty but the skin was a blackened mess.  :) Natural Pork Bacon  Freely ranged, raised without the use of antibiotics, grown hormones or animal by product in the feed. Oh how we wish that pigs were made of mostly bacon.  It's the first thing to sell out at the store, and the item that people can't use something else as a replacement if they need it for a meal.  As each hog that we get butchered only yields about 12 pounds of bacon to the 200 lbs of other cuts, it makes the bacon even more desirable.  I've said it before and I'll say it again.  When you fry your bacon, pour off the fat and keep it in a mason jar in your fridge.  When you are frying potatoes or greens or anything else, be certain to use just half a tsp of the bacon fat for added flavour. Townsend Farms Natural Pork Sausage  Freely ranged, raised without the use of antibiotics, growth hormones, or animal by-product in the feed. The fine folk at Townsend farm raise large black hogs, and heirloom breed that is well suited to free range living, and is incredibly flavourful. While you eat these sausages, pay attention to the beautiful seasoning.  The farmer researched classic Italian and English recipes before making the sausages.
