CSA pick up July 23
Our new bison farmer sausage rocks. Our new butcher adds some freely ranged pork to the ground bison, adds salt pepper and brown sugar, and then slowly smokes it over natural wood smoke. The flavour is INCREDIBLE!! Despite the added pork, the sausage is still lean because of the bison base. Be certain to cook it over a low temperature. Some of this with new potatoes and dill, and a freely ranged egg would make a brunch fit for a king. (It's what Marc and I had for brunch last Sunday).
The beautiful whole whitefish that you have in your share was sustainably harvested in Northern Manitoba. Our poor habits of only eating Pickerel mean that these beautiful fish are usually caught, killed, then thrown back into the lake as waste. This horrible practice is slowly emptying our lakes of fish stocks. The solution, eat as much Pike and Whitefish as you do Pickerel! This firm white fish is excellent grilled, stuffed and baked, cut into steaks and fried, or turned into fish tacos. You can make a mean 'tuna' fish salad sandwich with the leftovers. This week you also receive a pound of ground, freely ranged Berkshire pork. Turn it into meat balls, make burgers, or koftas. So versatile and delicious!!! Feeling culinary? Make up your own mix of herbs and spices to make your own sausage meat. Some of our customers like to have ground pork on hand to mix in with the grass fed meats, to give them a little more fat.
