Slow Cooker Tomato, Kale and Quinoa Soup

  • 1 cup uncooked quinoa, rinsed
  • 2 cans diced tomatoes (or diced fresh tomatoes)
  • 1 can white beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 TSP dried oregano
  • 1/2 TSP dried basil
  • 1/4 TSP dried rosemary
  • 1/4 TSP dried thyme
  • 4 cups vegetable broth
  • 1 lb kale, coarsely chopped
  • salt and pepper to taste
  1. Place quinoa, tomatoes, beans, onion, garlic, oregano, basil, rosemary and thyme into a slow cooker.
  2. Stir in vegetable broth and 2 cups of water until well combined. Season with salt and pepper to taste.
  3. Cover and cook on low for 7-8 hours or high for 3-4 hours. Right before serving, stir in kale until just wilted. Enjoy!
