Sausage Potato Casserole

  • 1 lb pork sausage
  • 1 can cream of mushroom soup
  • 3/4 cup milk
  • 1/2 onion, chopped
  • 1/2 tsp salt and pepper
  • 3 cups sliced potatoes
  • 2 cups shredded cheese
  • Optional: fresh parsley, minced
  1. Preheat oven to 350 degrees. In a large skillet, cook sausage over medium heat until no longer pink, drain and set aside. Combine soup, milk, onion, salt and pepper.
  2. In a greased baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers.
  3. Cover with foil and bake for 60-65 minutes or until potatoes are tender. Sprinkle with cheese and bake uncovered for about 5-6 minutes or until melted. Garnish with parsley if desired.
